Sweet Potato Pancakes
Ingredients
- 1.25kg sweet potato
- 1 tablespoon of soy sauce
- 1/2 teaspoon salt
- 1 teaspoon of sugar
- 1 cup flour
- black pepper
- oil/butter for frying
Sour cream to eat with.
Peel the sweet potatoes and cut into quartes
Steam in covered pot with very little water for about 45min until very soft.
Place in a streaner for at least 2 hours to cool off and drain extra water.
Mash the potatoes with a blender or in a food processor. Add flour,
salt and pepper, sugar and soy sauce
and stir just until incorporated.
Heat oil or butter in a non-stick frying pan over medium-low heat. Place small amoutns of mixture in the pan using 2 spoons. Surface patties a little bit.
Fry about 10 min until golden. Serve warm.
