Pasta with Asparagus and Tomatoes
Ingredients
- 180g of penne pasta
- 10 asparagus
- 20 cherry tomatoes
- 1/4 red onion
- whipping cream
- Parmesan
- salt
Boil a pot of water, and add salt.
In the meanwhile chop the onion and cook it in a pan with a little bit of olive oil. Chop the asparagus and add it into the pan. Cook for about 5 min.
Cut in half the cherry tomatoes and add them into the pan. Add salt to taste. Cook everything for 10 min.
When the asparagus are cooked (but still crunchy. Do not overcook them!) add the whipping cream. Weigh the pasta and add it in the boiling water
Strain when cooked "al dente" and add the pasta to the pan.
Mix the pasta with the sauce and serve it hot. Add Parmesan on the top if you like it!
