Italian Peperonata recipe

                                             

              Italian Peperonata

        


Ingredients

- 6-8 bell peppers (if you can find this green sweet peppers even better)
- 1 big onion
- 300g of tomato sauce
- basil leaves
- olive oil
- 2 garlic cloves
- salt and pepper
Warm up 3 tablespoons of olive oil in a pan and let the garlic cloves sweat. Chop the onion and add it in the pan
Let the onion sweat at low heat for about 15 minutes until they get soft and traslucent.
Meanwhile wash and chop the bell peppers, taking out all the seeds and the white parts inside.
Add them in the pan and cook them for 20 minutes low heat covered, without adding any water
When they are half cooked add the tomato sauce and mix.
Add the fresh basil leaves 
Salt and pepper to taste. Mix gently and finish o cook for about 10 minutes.
Taste and adjust with salt and pepper. Serve warm.
