Hummus with Mushrooms
Ingredients
- hummus
- 250g of mushrooms
- half onion
- italian parsley
- paprika, cumin, salt and pepper
- olive oil
To eat with: pita bread or soft tacos
Make hummus.
Dice the onion and put it in a pan with some oilve oil. Warm it up.

While the onion is sweating, add paprika, cumin and pepper to taste.
Wash and cut the mushrooms. Don't cut them too small, in half or 3 pieces, leaving the small ones intact.
When the onion is soft add the mushrooms in the pan and stir.
add the parsley and stir. Cover the pan and let them cook for 5 to 10 min. They should make enough water to not stick on the pan, but check it once or twice and in case add a bit of water. Taste them and add salt according to your taste.
Once the mushrooms are cooked let them cool for a few min without covering the pot. In a serving bowl place the hummus and add some mushrooms in the center. Add a little bit of olive oil on top.
Sprinkle some paprika on top to decorate it. Serve warm.
